Rice is one of my favourite things to cook with as it’s quick, easy and the amount of dishes it can be added to is incredible. These meatballs are so quick to make, look like you’ve put a LOT of effort in (when you haven’t) and they can be frozen and reheated and still taste amazing, so you can make them in bulk. I’m loving this healthy eating malarkey at the moment. Lack of sweet things due to Lent means I’ve been making meals which are designed to fill me up for longer – curbing my sweet craving.
